3 cheese tuna melt

lunch is my least favorite meal of the day.  i rarely know what i want in advance, and my hunger always interrupts my productivity... hey, feed me... now!  as a result, i've gotten pretty good at coming up with good food, fast.  something that will keep my hunger at bay until it's dinner time, but wont drag me down with the itis because it's so heavy.

today's lunch of choice... 3 cheese tuna melt.  it takes all of 5 minutes to make, and it cooks super fast.  especially if you have a toaster oven.  swap out the avocado for tomato for a more traditional (and less fat) tuna melt.  or add a tomato for a burst of added flavor in each bite.

DIRECTIONS

  1. preheat oven to 350 degrees

  2. mix tuna, mayo, parmesan & sharp cheddar, and salt & pepper

  3. season avocado with salt, pepper & garlic powder

  4. top each half of english muffin with half the avocado, then half the tuna mixture

  5. top each half of english with 1 tblsp of mild cheddar

  6. place in oven on foil for 10 minutes (or until cheese is melted)

INGREDIENTS

  • english muffin

  • canned tuna (in water, drained)

  • 2 tablespoons of mayo

  • 1 avocado, sliced

  • 2 tablespoon shredded mild cheddar

  • 1 tablespoon shredded parmesan

  • 1 tablespoon shredded extra sharp cheddar

  • salt, pepper, garlic powder to taste
